If you’re trying to eat healthier in the new year and getting bored with salads already, this dressing is a great way to add pep to your routine. I’ve always scoffed at buying store bought dressings because it’s such an easy thing to make at home. The first day I had this on a kale taco salad (pictured), and the second day I spread it on a potato, chorizo, & kale burrito.
The texture is pretty thick and creamy, so I like it with raw kale. Toss it, massaging the dressing into the leaves and let it sit for about 30 minutes before adding the other ingredients. This allows the kale to tenderize and become more palatable. For all the kale nay-sayers out there – this is the secret to raw kale. Give it a shot.
Tomorrow I am going to be in an airport dreaming about that salad while eating overpriced wilted lettuce, embarking on a journey to Thailand! I will be cooking on a boat for a little while, with spotty internet access, but expect some pictures!
Pepita, Cilantro, & Lime Dressing
1/4 cup raw pepitas
1/2 cup cilantro
2 cloves garlic
1 tsp cumin
1 tsp salt
2 Tbsp olive oil
Juice of 1 lime
Optional: pickled jalapeño according to your desired picante-ness; I used about 7 slices.
Combine all ingredients in a blender and blitz until smooth.
